Citric Acid

Citric acid is used as a food additive which adds a sour flavor to baked goods.

Ascorbic Acid

Ascorbic acid is a natural and safe food additive. In baking, ascorbic acid creates an acidic environment for yeast which helps yeast work longer and faster. When a little ascorbic acid is added to bread yeast, it gives bread additional volume. Ascorbic acid also acts as a preservative which deters mold and bacterial growth. In baking it is used to oxidize and preserve flour.

Sodium Benzoate

Sodium benzoate is the most widely used food preservatives. It is used in the baking industry as a food additive that helps stabilize flavors(flavoring agent) and as an antimicrobial.

Sodium benzoate controls bacteria, mold, yeasts, and other microbes by interfering with their ability to make energy. It is typically used in margarine, salsas, maple syrups, pickles, preserves, jams and jellies.

Potassium Sorbate

Potassium sorbate is primarily used as preservative which inhibits the growth of molds and yeast.

Sodium Erythorbate

Sodium erythorbate is a food additive and preservative which acts as an antioxidant. It is produced by fermenting the sugars from sugar cane, beets and corn. Sodium erythorbate is effective in keeping the color and natural flavor of food and prolonging shelf time. It is typically used in the production of foods, such as meat products, beer, beverages, canned fruits and vegetables, frozen fish etc.

Sodium Tripolyphosphate

Sodium Tripolyphosphate is used in flour products as a gluten improve agent, in milk products as dispersal agent, and as fat emulsifier, protein dissolve improve agent, and an antioxidant improving and stabilizing agent.

In cured meat products, sodium tripolyphosphate is utilized as a moisture retainer.

Sodium Hexametaphosphate

Sodium hexametaphosphate can be used as food and nourishment additive, a quality improver, and regulator.

Sodium Bicarbonate

Sodium bicarbonate is a food additive and essential ingredient in the food industry. In baking powders, sodium bicarbonate releases carbon dioxide gas when it reacts with an acid or heat. It acts as a chemical leavening agent for baked goods.
